My project involves collecting items like flowers, berries, and soil from various natural environments in British Columbia and isolating wild yeast from the surface of these items. After identifying the yeasts using sequencing techniques, we select those with known potential for brewing and use them to make beer. The goal of our project is to discover new yeast strains that can produce unique and, importantly, enjoyable flavors in beer during fermentation.
